Not only do we get a tour of Jax Austin’s ‘Dan the Adventure Bus’ we also get to see how Elissa make her amazing Turkey Soup. She’s even going to give you the recipe.
This soup, as a sort of ‘By The Way’, won my heart.
Jax Austin, like so many folks now-a-day’s took your ordinary short bus and turned it into a living being. It’s now more than a place to throw spitballs at the bus driver (not that I condone such actions. We all know spit balls are best in the classroom) it’s a place to see the world while evolving/deepening. A person’s experiences deepen them and the bus is a sort of transport to that deepening. This is why I am drawn to this lifestyle. It seems to me to be boldly inviting a deepening of self. This takes guts and I admire it a great deal and always have.
The food we make today is a hearty Turkey Soup/Stew. A hearty stew which will keep the cold out on a Winter’s night but the smiles in.
1 lb. ground turkey
1/2 red onion
6 peeled carrots
6 peeled potatoes
1 can of chicken and rice soup
1 can of vegetable beef
1 can of water
1 can of corn
1 can of green beans
1/2 carton of vegetable broth
Brown the meat. Add onions, meat and the another ingredients. Cook for 30 minutes or until potatoes and carrots are tender.
